ABOUT JONATHAN ZARAGOZA

Chef Jonathan Zaragoza, featured in Netflix’s "Taco Chronicles" and FX’s "The Bear", is a rising star in Mexican cuisine. Growing up on Chicago’s South Side, his love for cooking began at just five years old, standing next to his mother in the kitchen. By 12, he was roasting goat in a wood-burning oven built by his father and grandfather, a tradition that deeply influenced his culinary path.

In 2007, Jonathan and his family opened Birrieria Zaragoza, where he honed his skills with birria, a traditional roasted goat dish. His talent led to stints at Michelin-starred restaurants like Sepia and Sixteen, and by 22, he became the Executive Chef at Masa Azul. Today, he’s the chef behind Birrieria Zaragoza, Čálli, and El Oso, blending traditional flavors with modern techniques. Most recently, Jonathan shared his journey with students, introducing them to his famous beef birria tacos, chilaquiles, and mango chili smoothies.
